First, you'll need a Core. It can go from 1 to level 10. The higher Core's level - the more vitality ( health ) you'll get. I suggest you to buy it instead of crafting, but choice is up to you.
Griffon is faster by a 30% (more or less, it was tested) and moves more reliable. Don’t get me wrong, Beetle is amazing on land but griffon is superior if you have a good starting point because you can do more versatile tracks while adrenaline hits at a faster speed. If only we had more griffon adventures for tyria, HoT, etc, it Would be Amazing
To get a griffon mount, you must own the Path of Fire expansion. Unlocking the griffon mount requires you to complete a series of achievements. You'll need to activate the first achievement by completing the Path of Fire expansion story and journeying to the Sunspear Sanctuary. Hawkgates waypoint just outside of ebonhawke. There is a launch pad. Deploying the glider at the apex of the launch and immediately deploy griffon after. Can practice trading height for speed, etc. Alternately, the Captain's Airship Pass and Gendarran fields. Downed icon easter egg on the saddle. This mount skin can be dyed. It has 4 dye channels: body, leather tack, metal accessories and eye/magical FX. At day its head loses its deathliness and is more like a regular cat's head. This skin seems to be based on a sphynx cat.

Bunny with level 2 booster is enough for flat ground. Bunny trick -> glide boost -> griffon -> bond of vigor -> griffon dive boost. does not work for me. i hit the ground. i have the feeling this is ping and fps dependend. You can also do 4 skyscale dodges and mount the griffon on flat ground (without the jade bot).

The answer is Yes. While many blow up Skyscale to be the be 'the best' mount, I far prefer Griffon in many situations, but both are equally useful when used properly. The suggestion I didn't see here was to use Bjora Marches (Icebrood Saga Chapter 2 and 3) to help farm for your Skyscale.
